With us getting Imperfect Foods boxes (see my review: https://alittlebiteoflife.com/imperfect-foods/ ) and lots of produce from our garden (https://alittlebiteoflife.com/our-garden/), we have lots of fresh produce around the house. Plus right now the stores are getting great looking produce too. In the effort to waste less, we’ve been trying new recipes. Here are some of the ones I’m currently loving:
Squash and potatoes (my mom’s recipe, which is why there’s no measurements)
- Scalloped white squash
- Russet potatoes
- Onion
- Seasonings
- Oil or butter
Drizzle oil or butter in a skillet and add your onion. Cook until onions are translucent. Meanwhile, peel and chop the scalloped squash, making sure you also cut out the core. Add to the pan. Cook for a little bit before adding peeled and chopped potatoes. Season as you like. Cook until potatoes are done.
Watermelon Ice (Taste of Home Farm to Table 2019)

I have made this once and it was good. I am thinking about changing out the honey in the recipe though. It is way too overpowering. I’ll probably swap it out with either a no calorie sweetener or regular sugar.

This recipe is so good! I’ve made this so many times and I still can’t get enough of it. The only addition I made to the recipe, is that I added pepper for even more flavor. It had plenty of salt, but no pepper.
Butter Squash (another of my mom’s recipes)
- Yellow squash, sliced
- Water
- Butter
- Optional-cinnamon and sugar
Boil yellow squash in water until tender. Drain and add butter (and cinnamon and sugar). Cook a bit longer then serve.
